Baijiu Martini

  • 60ml Kouzijiao 5-Year Aged Baijiu
  • 30ml dry vermouth
  • 1 dash orange bitters
  • Lemon twist to garnish

Instructions

  1. 1.Add all ingredients to a mixing glass
  2. 2.Fill with ice and stir for 20–30 seconds
  3. 3.Strain into a chilled martini glass
  4. 4.Garnish with a lemon twist

  • 45ml Guoyuan Danya Baijiu
  • 6 fresh mint leaves
  • 15ml lime juice
  • 10ml simple syrup
  • Soda water to top

Instructions

  1. 1.Gently muddle mint, lime juice and syrup in a glass
  2. 2.Add baijiu and fill with crushed ice
  3. 3.Stir, then top with soda water
  4. 4.Garnish with a mint sprig and lime wheel

Baijiu Sour

A silky, citrus-forward sour with the umami depth only baijiu brings.

Ingredients

  • 50ml Kouzijiao 6-Year Aged Baijiu
  • 25ml lemon juice
  • 20ml simple syrup
  • 1 egg white
  • 2–3 drops Angostura bitters

Instructions

  1. 1.Add all ingredients to a shaker
  2. 2.Dry shake (no ice) for 30 seconds
  3. 3.Add ice and shake again until cold
  4. 4.Double-strain into a chilled glass
  5. 5.Dot the foam with bitters

The dry shake builds the signature silky foam from the egg white.

  • 2 thin slices fresh ginger

Tips from the bar

Pick the right aroma

Strong-aroma and blended-aroma baijiu shine in bold, spirit-forward drinks; lighter styles suit refreshing highballs.

Respect the alcohol

Baijiu is typically 40–53% vol. Start with 30–45ml per drink and let the recipe breathe before adjusting up.

Ice matters

Use large ice cubes to slow dilution. Baijiu's aromas need water to open — but gradually.

Umami is your friend

Try a bar spoon of oloroso sherry or a dash of soy bitters — baijiu's savory side loves the company.
