Spicy Crayfish

Ingredients
- 2 kg live crayfish, cleaned & deveined
- Dried chilies & Sichuan peppercorns
- Doubanjiang (fermented chili bean paste)
- Heads of garlic & ginger
- 1 can of beer
- Purple perilla leaves
Method
- Fry doubanjiang, garlic, ginger, chilies and peppercorns in hot oil until fragrant.
- Add the crayfish and stir-fry over high heat until shells turn red.
- Pour in the beer, cover, and simmer 10 minutes.
- Reduce the sauce, toss in purple perilla, and serve piping hot in a basin.
